其實我個人不太喜歡吃蠶豆 :P 我媽總是把蠶豆和蔥一起拌炒煮得軟綿綿,口感粉粉怪噁心的。
不過美麗托斯卡尼(Bella Tunscany)一書中,描述春季北義大利人全在吃初實的嫩蠶豆,而且是搭配起士生吃品嚐水嫩甜美口感,讓我重新思考也許蠶豆不要煮得太軟綿就別有一番風味吧~
以下食譜中有些食材似乎在台灣不太容易取得,我認為應該可以用羅蔓取代小萵苣,豌豆芽代替水芹,至於Pecorino Cheese這種托斯卡尼特產更是根本不可能買到(雖然可以嘗試去起士專賣店尋寶),只好使用一般的熟成起士,任選一種自己偏好的囉~
還有,雖然這句話很多餘,罹患蠶豆症的人請勿自尋死路,直接放棄這道料理吧~
Recipe from chef and restaurateur Pino Luongo
[材料] 四人份
蠶豆900g
小萵苣(baby lettuce)4顆
水芹(watercress)100g
細蔥2根
檸檬1顆
Pecorino Cheese 100g
特級橄欖油2大匙
海鹽適量
現磨黑胡椒適量
[作法]
1. 萵苣和水芹洗淨瀝乾,檸檬榨汁,細蔥切碎,起士切丁備用。
2. 準備一大鍋鹽水煮至沸騰,同時準備一盆冰水。將蠶豆洗淨放入煮沸的鹽水中煮約1分鐘後,撈起放入冰水中降溫,去皮瀝乾。
3. 在小碗中放入細蔥、檸檬汁、海鹽和黑胡椒,混和均勻後慢慢加入特級橄欖油,持續攪拌至均勻乳化。
4. 將萵苣和水芹盛盤排列,中央放蠶豆後淋上醬汁,最後以起士丁點綴。

However I wonder where to buy the
fresh蠶豆.
In addition it is better to add warning about some people are not suitable to have 蠶豆 due to the
蠶豆症.
